Hummus heads

You will need:

2 lettuce leaves, cut into very thin strips

A handful of roasted red pepper strips

8 cherry tomatoes, cut into halves

4 pitted black olives, sliced

1 cucumber, sliced

Any other vegetables of your choice

2 wholemeal English muffins, sliced in half and toasted

4 tablespoons hummus


  1. Place the lettuce, red pepper strips, tomatoes, olives and cucumber slices in piles on a plate.

  2. Spread the hummus onto the toasted English muffins.

  3. Use the vegetables to make funny faces on them. You could use lettuce or pepper strips as hair, tomatoes or olives could be eyes; and cucumber slices can be ears!

  4. Use your imagination, adding any vegetables however you like and have fun!


Apple and sultana muffins

You will need:

200g self-raising flour

1 teaspoon of baking powder

1 teaspoon cinnamon

50g wholemeal flour

100g golden caster sugar

2 eggs

125ml semi-skimmed milk

4 tablespoon sunflower oil

2 grated apples

100g sultanas


  1. Heat your oven to 180C, 160C fan or gas 4 (this will depend on your oven - ask an adult to check and turn it on for you).

  2. Mix together the self-raising flour, baking powder, cinnamon, wholemeal flour and golden caster sugar in a large bowl.

  3. In another bowl mix the eggs, semi-skimmed milk and sunflower oil, then pour it into the first bowl and mix well.

  4. Stir in the grated apples and sultanas.

  5. Divide the mix between 12 muffin cases and bake for 25 minutes – ask an adult to put it in and take it out of the oven for you.

  6. When time is up, cool on a wire rack.

  7. Put one in your lunchbox and take it to school!
